Delicious Low Carb, Gluten Free, Vegan Flax Muffins!!

O.M.G!!! These are so delicious & easy to make!!! Taste Exactly Like Muffins!! Read On for the Recipe:

I was experimenting so I did not measure but that just proves how simple this recipe is!

I pour about 1/2 a box of ground flax seed in my Kitchen Aid Blender.
Then I poured in a liter of Egg Beaters.
Then I gradually scooped in my favorite About Time Vegan Protein. I used about 3 scoops. You want to keep adding the powder until the batter has a nice, thickish texture to it, like traditional batters.
I then mixed in some cinnamon.

Side Note: Love This protein powder. It has a Thicker consistency  than regular protein powder and a nutty flavor to it. Its made with coconut oils and pea protein. Highly Recommend

I  then sprayed cupcake tins with cooking spray and poured batter in. Baked at 350 for 30 minutes and yum! Absolutely Delicious!

You can always mix it some chopped apple or banana, nuts or chocolate chips for variation. Have fun & experiment :) Let me know how this turn out for you!
